How Crave Started
A passion baked
late at night.
Favi Rossenwaser, the founder and CEO of Crave Sourdough, started baking early in the week to prepare for Shabbos — experimenting with sourdough late Monday and Tuesday nights. What began as curiosity quickly became a passion: learning the rhythm of fermentation, perfecting the rise, and chasing the perfect crust. Each week the loaves got better. Friends started asking for more. Word spread. What started out attracting artists and foodies eventually got everyone hooked.
The Garage That Started It All
Humble beginnings,
big flavor.
The first Crave bakery opened in a small garage space. It was simple, humble, and focused on one thing: making real artisan sourdough the right way. But the bread spoke for itself. Within a short time, the garage bakery became a hotspot for artisan sourdough. People came for the fresh loaves, the crust, the flavor, and the feeling of something authentic being made right in front of them. The demand kept growing.

Crave Today
Two locations.
One craft.
Today Crave Sourdough continues that same craft in two beautiful Brooklyn locations: Williamsburg and Borough Park. While the space has grown, the philosophy has stayed the same: Slow fermentation. Real ingredients. True artisan sourdough.

to oven.

The Starter
Everything begins with our natural sourdough starter — a living culture that develops flavor through fermentation.

Slow Fermentation
The dough rests and ferments slowly, allowing natural flavor and structure to develop.

Hand Shaping
Every loaf is shaped by hand, giving each its unique character.

Scoring
Each loaf is scored with a blade before baking — guiding how the bread opens and giving every loaf its signature look.

The Bake
High heat creates the signature golden crust while keeping the inside soft and airy.
Come choose your perfect crust.
Our personal favorites? The burnt ones with a thick crust. Don't knock it till you try it 😉
